By our count, that's a win-win-win-win!\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eWe sourced this coffee from a farm our roaster visited four years ago with help from our friends at Ally Coffee.\u003c\/p\u003e\n\u003cp\u003eCoffee producer Petrônio Otávio Borges de Sousa operates Fazenda Santa Rosa in Cambuquira, Minas Gerais in the Sul de Minas region of Brazil. Petrônio was born to a coffee producing family, with history stretching back to his grandfather who set the standard of the family’s devotion to agriculture. Today, Fazenda Santa Rosa—which totals 636 hectares of land and includes 290 hectares of coffee production—is just one of the family’s farms in the Sul de Minas region. After a survey this year, it was also declared to be carbon neutral in all its operations! Quite an accreditation for a country in which mechanized picking is de rigueur. \u003c\/p\u003e\n\u003cp\u003ePetrônio’s main motivation is to produce specialty coffees, aiming to produce high quality lots with a commitment to the hard work and innovation needed to accomplish his goal. That motivation is supported by the social ties that connect Petrônio and his family to the broader coffee industry. As he explains, “[relationships] created within the coffee market, whether with friends in Brazil and customers and partners abroad, also motivate us more and more to increase our commitment and performance in the sector.”\u003c\/p\u003e\n\u003cp\u003eThis lot of Yellow Bourbon coffee underwent Natural processing. Yellow Bourbon was discovered in 1930 on a Red Bourbon farm in Pederneiras, São Paulo, Brazil. It’s unclear if Yellow Bourbon developed as a natural mutation of Red Bourbon, or if it was a naturally occurring cross between Red Bourbon and Yellow Botucatu, a mutation of Typica discovered in 1871 in Botucatu, São Paulo. Yellow Bourbon is known for good cup quality and relatively high productivity, and has come back into fashion as a cultivated variety across Brazil after its initial novelty wore off in the mid 1900’s. Mexican coffee has dwindled to almost nothing in recent years as a result of coffee leaf rust, low C market prices, political strife, and drug trafficking. Almost all remaining Mexican coffees are grown on large estates in Oaxaca and other well-known provinces.\u003c\/p\u003e\n\u003cp\u003eThis coffee is different. It is from the Guerrero region, and is grown by indigenous people in traditional biodynamic fashion. These coffees are from tiny farms (often less than a hectare) with productions of less than 60 kg from many of them. These farmers' way of life depends on companies like Skylark to support them by paying higher prices than the market would offer for the quality they supply... that's why we bought a really big lot from Guerrero this year. Fortunately, the quality of this particular lot is stellar. Luscious notes of Ferrero Rocher and cherry preserve will reward you for supporting these farmers along with us.\u003c\/p\u003e\n\u003cp\u003eWe sourced this coffee through Ensambles, who do superlative work to shepherd this coffee from seed to our roastery. Here's a bit more info from them below:\u003c\/p\u003e\n\u003cp\u003eThe state of Guerrero is one of Mexico’s 16 coffee producing states, bordering Oaxaca and Puebla. In Guerrero, 80% of the territory are mountains and the main economic activity is agriculture. Coffee was first introduced by the Spanish along the coast in Sierra de Atoyac, and most of the labor force for picking coffee was brought over from the poorest areas of Guerrero - a region called Montaña Alta. Those workers, seed by seed, propagated their homes with coffee, bringing it in their pockets from the big plantations in Atoyac. The region is now characterized by the production of shade grown natural coffees. Guerrero almost only produces naturals, which is rare in Mexico, with more than 90% of total exported coffee being washed.\u003c\/p\u003e\n\u003cp\u003eNowadays, Montaña Alta suffers from high rates of poverty, marginalization and migration to the more northern states of Mexico, as well as the US, in search for work. In the face of a lack of opportunities, and the growing demand for narcotics in northern countries, a crack in the door was opened for drug trafficking to take over these vulnerable regions. This proliferation of narco-trafficking has unfortunately painted Guerrero in a very unfavorable light, the perception of which is exceedingly difficult to overcome. Because of this context, few companies have invested in the area with regards to the purchasing of coffee. Almost 100% of Guerrero coffee is bought, directly or indirectly, by one single private company, who then resells to a big international buyer. This monopoly has set very low prices for coffee and a general lack of interest from this crop.\u003c\/p\u003e\n\u003cp\u003eEnsambles Cafes Mexicanos began a project focused on specialty coffee in this area back in 2017, a project led by Miguel Guevara, an agronomist originally from Montaña Alta. Miguel has been working with producers to improve quality and help reach out to different markets. Miguel delivers training on selective picking, cherry flotation, and drying. He also supports the project by obtaining regional funds to finance nurseries, local warehouses, raised beds etc. The first producers to join this initiative were all women. Many women in this region are empowered to make decisions because their husbands are living farther north for work. Those women call themselves the “Evas,\" in reference to the first woman Eve. They decided to call the project JUBA, which means 'mountains' in their indigenous language Mephaa. Discontentment with low prices has allowed this project to grow rapidly, increasing from 5 to now 70 producers in 5 years.\u003c\/p\u003e\n\u003cp\u003eEnsambles now has a regional lab in Montaña Alta with analysts and cuppers where producers can come and bring their sample. We provide feedback and recommendations until their coffee qualifies for the specialty premium. Our criteria range from cup quality, humidity\/water activity, to yield. We are now able to employ and empower two women from the community to coordinate the lab and reach out to more producers across the region. \"Nahual\" means the ability to transform yourself into another being. We're having a few transport issues on our staple decaf from El Carmen, and this one from our long-term partners at Ally Coffee is perfectly filling the gap until it returns. \u003c\/p\u003e\n\u003cp\u003eThe town of Buesaco lies high on a ridge in the Andes Mountains in the Nariño department of Colombia.\u003cspan\u003e \u003c\/span\u003e\u003cspan class=\"_aacl _aacp _aacw _aacx _aad7 _aade\"\u003ePromotora Cafe de Altura\u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003ehas its offices, cupping lab, and warehouses there, where the co-op collects coffees from smallholders whose farms are tucked into the slopes surrounding the town. The cooperative works with more than 300 smallholder farmers all over the Nariño department who generally harvest coffee all year round. At the co-op’s facilities, lots are analyzed and purchased, and the farmers are paid premiums on top of the market price. These premiums incentivize high quality standards and good agricultural practices, like avoiding the usage of glyphosate and other chemicals.\u003c\/p\u003e\n\u003cp\u003e\u003cspan class=\"_aacl _aacp _aacw _aacx _aad7 _aade\"\u003ePromotora Cafe de Altura\u003c\/span\u003e\u003cspan\u003e \u003c\/span\u003ecups coffees throughout harvest delivery to build lots that are uniform and consistent in bean size and cup profile. This lot of decaffeinated coffee in particular consists of small batches of beans from farms around the Galeras Volcano. This coffee was decaffeinated using the Ethyl Acetate (EA) decaffeination process.\u003c\/p\u003e\n\u003cp\u003eEthyl acetate is produced by esterification between ethyl alcohol, which is derived from the fermentation of sugar cane, and acetic acid. The green coffee is submerged in a wash of water and ethyl acetate, during which the ethyl acetate bonds with the caffeine in the coffee and begins to extract it from the green seeds. The EA solution is flushed and the process is repeated until reaching a minimum decaffeination level of 97%. They provide countless opportunities for their farming communities by not only teaching and motivating farmers but also hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. They also work hard to incorporate sustainable farming methods, rewild forests on their land, and protect local wildlife to promote ecosystem health for coming generations.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eTo create this lot, cherries were de-pulped and then fermented with extra pulp from another washed coffee lot in sealed barrels. There were no added yeasts or starters, but the pulp gave the bacteria some extra sugar to feed on. After fermentation, the coffee was washed, spread in thin layers on African raised beds, and dried in the sun for about 20-25 days. The farmers refer to this type of farming as \"coffee forest\", with all coffee grown in well-regulated shade that comes from native species of shade trees – in particular 'ingas', many species of which produce giant, sweet, podded beans that look and taste like something between candy floss and vanilla ice cream. Like most beans, ingas are nitrogen-fixing, which is great for the soil. The bean plants are also good at producing oxygen and capturing carbon. They help facilitate an overall healthy microclimate by absorbing loads of water during the rainy season, which helps stop the coffee from getting overly wet (leading to fungus), and they release moisture during the dryer and hotter parts of the year, reducing soil and plant temperature by as much as 25%. This farm is part of the Los Naranjos group headed by Sigfredo Corado, a retired professor of agronomy from the National School of Agriculture. It's also part of the Renacer Program, a technical coffee field school for producers in the area to learn about better farm management practices. This program is funded by Raices (Roots) and supported by Catholic Relief Services in El Salvador.\u003c\/p\u003e\n\u003cp\u003eRenacer Program is led by Sigfredo and 6 field technicians; they help small to medium producers in the area by training in best farm practises that are restorative for the land and soil, as well as beneficial for the yield and quality of the coffee. The field school is based at Finca Noruega, where classes are held twice a month. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker received a bonus for his or her years of service, housing plots were priced at a fraction of the local rate, and workers received assistance to apply for the government house fund. In the beginning, this seemed too good to be true, but as the first families obtained their own homes everyone else followed suit. In a matter of three years, the town was brought to life, enriched by security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc.) and 96% of these own their own home, giving them options for the future that they themselves can choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots such as this one are picked by a special team of expert harvesters who are paid well above the daily rate for their exceptional skills. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The pickers represent the farm’s most valuable asset. They hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming the success of the model.  \u003c\/p\u003e\n\u003cp\u003eAquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour lines, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. For example, since soil health is the most important factor for a successful farm, Aquiares takes many steps to naturally improve the farm’s volcanic soil. The organic matter from pruning and the leaf litter from the coffee and shade trees are left to feed soil microbes and provide organic nutrients. \u003c\/p\u003e\n\u003cp\u003eThe diversified shade trees (over 40 species) also cool the ground, slowing the ripening of the coffee, which allows for sugars from the mucilage to be fully absorbed by the bean, thus improving cup quality. The farm’s agricultural objective is to find synergies like these, where environmental health translates into coffee plant health, which ultimately contributes to long-term stability in the production of high-quality coffee. The farm’s terrain varies from gently sloping to steep hills. Valleys between hills create microclimates that are ideal for growing mainly Caturra and grafted Arabica-Nemaya varieties. Although Aquiares is considered large by Central American standards, the farm aims to tend to every individual coffee plant’s needs. Therefore, Aquiares utilizes a system of pruning each plant on its own, instead of pruning by row or by lot.\u003c\/p\u003e\n\u003cp\u003eThrough an intensive rehabilitation program, Aquiares has re-planted more than 400,000 coffee trees in small patches of existing fields. This rejuvenated the crop of trees and increased the land’s utilization. It also played a crucial role in the 2012 rust attack, as young plants resisted the disease better, slowing its spread. Stringent environmental stewardship enabled the farm to achieve Rainforest Alliance Certification in 2003. In 2012, Aquiares became the first farm in Costa Rica to fulfill the requirements of the Rainforest Alliance Climate Module. This requires adhering to careful standards of greenhouse gas emissions and energy use, which are meticulously tracked through each harvest season. The sting of a sesongot is extremely painful and can even be fatal, so it's infamous among regional coffee farmers as something to look out for when picking. Harvesting this coffee is no walk in the park, and we're really grateful to Kahpi's team for having the skills and courage to do it.\u003c\/p\u003e\n\u003cp\u003eAulia Kahpi has worked hard to achieve a reputation for quality and now works with 15 neighbouring smallhold farmers to process larger volume lots and secure better prices for their coffee. Kahpi inherited his farm from his parents, but his growing network of farmer collaborators has been achieved through his entrepreneurial spirit, hard work, and openness. Already an experienced processor, he recently attended Lucia Solis' Indonesian fermentation camps to further finesse his processing techniques.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThis coffee is a blend of these varietals: Abyssinia, Ateng, Caturra, Gayo, Timtim, and Typica. To create this lot, Kahpi selectively handpicked ripe, red cherry from his own farm along with some from neighboring farmers. He fermented the cherries for 24 hours, changing the water every 12 hours. After fermentation they were laid on patios to dry. The growers are members of a small and relatively unknown association called Associação da Barra, and we’ve sourced the coffee through \u003c\/span\u003e\u003ca href=\"https:\/\/minasul.com.br\/\"\u003e\u003cspan\u003eMinasul\u003c\/span\u003e\u003c\/a\u003e\u003cspan\u003e, a medium-sized cooperative that is very clever about using coffee “futures” contracts to empower producers, not just themselves.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003ch3 dir=\"ltr\"\u003e\u003cstrong\u003eHow to solve farmers staying poor while the market goes up\u003c\/strong\u003e\u003c\/h3\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eYou might have heard: the price for green coffee is the \u003c\/span\u003e\u003ca href=\"https:\/\/perfectdailygrind.com\/2025\/02\/coffee-prices-record-highs-roasters\/\"\u003e\u003cspan\u003ehighest it’s ever been\u003c\/span\u003e\u003c\/a\u003e\u003cspan\u003e – almost 3 times the average price of the last 15 years. This is causing chaos in the coffee industry, and those futures contracts play a key role. What follows is a little technical, but complex problems require some explanation, so here we go:\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAll coffee is \u003c\/span\u003e\u003ca href=\"https:\/\/medium.com\/@bramdehoog\/how-the-c-market-shapes-coffee-pricing-and-the-global-supply-chain-f7249781b4ff\"\u003e\u003cspan\u003ebought and sold\u003c\/span\u003e\u003c\/a\u003e\u003cspan\u003e on the Futures or ‘C’ market at the stock exchange in New York. Historically, this has been used to make traders and big corporations rich while keeping coffee prices low and farmers poor. Since the price for coffee has recently tripled, however, some of the biggest coffee traders in the world are in trouble – essentially because papering over bad ‘futures’ bets and rapid growth speculation takes cash, and that’s in short supply with each sack of coffee costing 2-3x what it did 16 months ago. Instead of using the futures market to speculate for their own profit, Minasul allows farmers to convert their coffee from futures contracts into physical coffee (and vice versa) at a time that benefits them, much like stock traders do. This is highly unusual and means that smaller farmers have more control and can boost their income in ways that they wouldn’t otherwise be able to do. Minasul also sells most of their coffee within Brazil rather than exporting it. This means that their business is more stable and they have access to quick cash to pay farmers promptly – a huge deal if you’re a coffee grower.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eBoth Minasul and Skylark are paying premiums to the farmers as well as donating some much-needed equipment and tech for the growers’ cooperative. We’ll be increasing these donations throughout the coming years using our pledge to put £1 per kilo sold into grower empowerment projects. With a background in NGO and development work, they decided to grow and scale the farm as the foundation for a larger company with greater impact. Coffee is a big deal in Ethiopia: More than 33% of the country's GDP comes from the export of coffee and 80% of that production comes from smallholder farms under 2 hectares, even as 90% of people working in coffee in Ethiopia don’t make a livable income. Bette Buna was formed to meet the obvious need to improve outcomes for smallholders and to generate opportunities for farming communities along the way. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eHaving started in 2019, they have already grown considerably. They have expanded the Taferi Kela farm from 2 to 50 hectares and have spread to a second 50-hectare farm in Megadu, Guji, where this lot was grown. Both farms have tree nurseries where varietals are grown for their own use as well as to share with surrounding farmers. Similarly, they have facilities where they process their own lots and educate other farmers in processing techniques while their ‘Coffee Campus’ programme provides training in roasting, brewing, and even exporting. Essentially, they invest in their farming communities not only by teaching and motivating farmers but also by hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. They also work hard to incorporate sustainable farming methods, rewild forests on their land, and protect local wildlife to promote ecosystem health for coming generations. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWe’re such big fans that we sent Micah and Tabitha to help and learn from them for a couple weeks this January. They were then decaffeinated using the Ethyl Acetate process, a natural and environmentally friendly decaffeination technique. To achieve this technique, green coffee beans are steamed to open their pores, making it easier for caffeine to be extracted. \u003c\/span\u003eThe beans are then washed with ethyl acetate, a naturally occuring compound found in fruit, which selectively binds to caffeine molecules. Ethyl acetate is able to dissolve caffeine without significantly affecting the flavor compounds in the coffee. After the caffeine has been removed, the beans are steamed again to remove any residual ethyl acetate. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker received a bonus for his or her years of service, housing plots were priced at a fraction of the local rate, and workers received assistance to apply for the government house fund. In the beginning, this seemed too good to be true, but as the first families obtained their own homes everyone else followed suit. In a matter of three years, the town was brought to life, enriched by security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc.) and 96% of these own their own home, giving them options for the future that they themselves can choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots such as this one are picked by a special team of expert harvesters who are paid well above the daily rate for their exceptional skills. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The pickers represent the farm’s most valuable asset. They hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming the success of the model.  \u003c\/p\u003e\n\u003cp\u003eAquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour lines, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. For example, since soil health is the most important factor for a successful farm, Aquiares takes many steps to naturally improve the farm’s volcanic soil. The organic matter from pruning and the leaf litter from the coffee and shade trees are left to feed soil microbes and provide organic nutrients. \u003c\/p\u003e\n\u003cp\u003eThe diversified shade trees (over 40 species) also cool the ground, slowing the ripening of the coffee, which allows for sugars from the mucilage to be fully absorbed by the bean, thus improving cup quality. Similarly, they have facilities where they not only process their own lots but also educate other farmers in processing techniques, while their Coffee Campus programme provides training in roasting, brewing, and even exporting. They provide countless opportunities for their farming communities by not only teaching and motivating farmers but also hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. They also work hard to incorporate sustainable farming methods, rewild forests on their land, and protect local wildlife to promote ecosystem health for coming generations.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eTo create this lot, fresh cherries were hand-sorted by each farmer to clean out underripe\/overripe cherries and any leaves or sticks. The sorted cherries were dried on African raised beds for about 20-25 days until they reached the right moisture level. The raised beds are important to facilitate airflow to ensure equal drying of each cherry.\u003c\/p\u003e\n\u003cp\u003eThe dry cherries, still in their natural hulls, were bagged and moved to the Bette Buna mill in Megadu. There the natural lots rest for a minimum of 8 weeks after bagging to improve the complexity and intensity of each cup profile. Each coffee was evaluated in the lab and a decision was made about which “sub-lots” could work as a community blend.\u003c\/p\u003e\n\u003cp\u003eAfter dry milling locally to remove the hulls, another round of hand sorting by the milling team removed defects. After that, the bags of green coffee were loaded on a truck to take a 3-5 day drive to the main Bette Buna dry mill in Gelan. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker received a bonus for his or her years of service, housing plots were priced at a fraction of the local rate, and workers received assistance to apply for the government house fund. In the beginning, this seemed too good to be true, but as the first families obtained their own homes everyone else followed suit. In a matter of three years, the town was brought to life, enriched by security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc.) and 96% of these own their own home, giving them options for the future that they themselves can choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots such as this one are picked by a special team of expert harvesters who are paid well above the daily rate for their exceptional skills. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The pickers represent the farm’s most valuable asset. They hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming the success of the model.  \u003c\/p\u003e\n\u003cp\u003eAquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour lines, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. The FCS is located in Nyeri County, east of the Aberdare Ranges and west of Mt. Kenya, and manages seven factories with a total membership of approximately 6,000 small-scale coffee growers. Kiandu Factory has almost 1,900 registered members, making it one of Mutheka's largest. The Sirangalli Community Project has now grown to include more than eight farms, ranging in size from one to 10 acres.\u003c\/p\u003e\n\u003cp\u003eThis initiative is part of SICC’s long-term vision to promote sustainable coffee farming by working directly with small coffee growers in the region. Most of these farms are family-run, with farmers and their families actively managing every aspect of cultivation and post-harvest processing. \u003c\/p\u003e\n\u003cp\u003eLocated in the Western Ghats, the Pushpagiri (also known as Subramanya Hills or Kumaraparvatha) is the second-highest peak in Kodagu and the fourth highest in Karnataka. This region is part of a globally recognized biodiversity hotspot, home to more than 5,000 species of flowering plants, 139 species of mammals, 508 species of birds, and 179 species of amphibians. At least 325 globally threatened species are found here. The range spans 60,000 square kilometers and forms the catchment for river systems that support nearly 40% of India’s water flow, making it a vital ecological zone for both people and nature.\u003c\/p\u003e\n\u003cp\u003eFarms in the village of Sirangalli range from one to eight acres; they are shade-grown farms, thriving in rich agroforestry ecosystems. The shade canopy is made up of native jungle trees and fruit-bearing trees. This multi-tiered structure supports biodiversity, enhances soil health, and contributes to the unique flavor profile of the coffees.\u003c\/p\u003e\n\u003cp\u003eTo create this lot, only the ripest cherries were carefully hand-picked to ensure optimal sugar content for clean and expressive fermentation. Right after harvest, the cherries were placed in a siphon to sort out any floaters. Next, the cherries were moved into sealed tanks where they were inoculated with a custom culture to create a controlled carbonic maceration environment. They were fermented for 60 hours. After fermentation, cherries were laid out on raised drying beds inside a polyhouse to protect them from rain and excessive heat. They were dried slowly over the course of 10-12 days, raked regularly to ensure even drying. Once the cherries reached a stable moisture level of 11-12% they were finally ready for safe storage and transport — this moisture level is ideal for preserving a clean cup profile without facilitating the growth of mold. The dried coffee was then packed in jute bags and stored for a minimum of two months before hulling. Aquiares is a Costa Rican legacy farm, and they've set an absolute gold standard in how they treat people and the planet. Check out more of their story by reading below:\u003c\/p\u003e\n\u003cblockquote\u003e\n\u003cp\u003eAquiares, one of Costa Rica’s largest and most historic coffee farms, sits high on the fertile slopes of Turrialba volcano. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker received a bonus for his or her years of service, housing plots were priced at a fraction of the local rate, and workers received assistance to apply for the government house fund. In the beginning, this seemed too good to be true, but as the first families obtained their own homes everyone else followed suit. In a matter of three years, the town was brought to life, enriched by security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc.) and 96% of these own their own home, giving them options for the future that they themselves can choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots such as this one are picked by a special team of expert harvesters who are paid well above the daily rate for their exceptional skills. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The pickers represent the farm’s most valuable asset. They hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming the success of the model.  \u003c\/p\u003e\n\u003cp\u003eAquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour lines, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. For example, since soil health is the most important factor for a successful farm, Aquiares takes many steps to naturally improve the farm’s volcanic soil. The organic matter from pruning and the leaf litter from the coffee and shade trees are left to feed soil microbes and provide organic nutrients. \u003c\/p\u003e\n\u003cp\u003eThe diversified shade trees (over 40 species) also cool the ground, slowing the ripening of the coffee, which allows for sugars from the mucilage to be fully absorbed by the bean, thus improving cup quality. The farm’s agricultural objective is to find synergies like these, where environmental health translates into coffee plant health, which ultimately contributes to long-term stability in the production of high-quality coffee. The farm’s terrain varies from gently sloping to steep hills. Valleys between hills create microclimates that are ideal for growing mainly Caturra and grafted Arabica-Nemaya varieties. Although Aquiares is considered large by Central American standards, the farm aims to tend to every individual coffee plant’s needs. Therefore, Aquiares utilizes a system of pruning each plant on its own, instead of pruning by row or by lot.\u003c\/p\u003e\n\u003cp\u003eThrough an intensive rehabilitation program, Aquiares has re-planted more than 400,000 coffee trees in small patches of existing fields. This rejuvenated the crop of trees and increased the land’s utilization. It also played a crucial role in the 2012 rust attack, as young plants resisted the disease better, slowing its spread. Stringent environmental stewardship enabled the farm to achieve Rainforest Alliance Certification in 2003. In 2012, Aquiares became the first farm in Costa Rica to fulfill the requirements of the Rainforest Alliance Climate Module. This requires adhering to careful standards of greenhouse gas emissions and energy use, which are meticulously tracked through each harvest season. The mill and his coffee farm, Finca Cedral Alto, are located in the town of Aserrí in Costa Rica’s Tarrazú region, about 45 minutes outside the capital of San José. The name Roble Negro means “black oak” and Cedral Alto means “high cedar grove”. These names indicate the importance of environmental preservation to Jorge and his coffee production team. The farm is filled with natural springs and freshwater sources, which the forested areas protect and keep clean, and which is situated at the transition between the Pacific side of the country and the Central Valley region, spanning 1750 to 2000 meters above sea level.\u003c\/p\u003e\n\u003cp\u003eJorge grew up playing football with his cousins on the farms around Aserrí where their parents worked picking coffee. He graduated from college with a degree in accounting and worked for Costa Rica’s Banco Nacional for 21 years, serving as branch manager for his last 11 years there. Jorge now owns a recycling company, Compañía de Reciclaje Ecológico, which he founded in response to the country’s pollution levels. The recycling company is an extension of his belief in taking care of the natural world around him. Compañía de Reciclaje Ecológico has 14 employees, creates another 20 indirect jobs, and annually processes 2,000 tonnes of materials like cardboard, paper, wood, plastics, metals, and more.\u003c\/p\u003e\n\u003cp\u003eJorge bought Finca El Cedral in 2007 from Don Fernando Monge. One of Jorge’s first concerns for El Cedral Alto was to protect the six water sources on the property. The waterways form the beginning of the Rio Jorco River and serve as drinking water aquifers for the nearby towns of Cedral Abajo, Vuelta de Jorco, and Acosta, as well as acting as irrigation sources for surrounding farms. The farm is dotted with stunning waterfalls thanks to these water sources — a reminder of the importance and power of fresh water to people, flora, fauna, and agriculture.\u003c\/p\u003e\n\u003cp\u003eCedral Alto also contains fruit trees planted between the coffee plants (including orange, peach, sweet lemon, plantain, soursop, and avocado) which provide for both people and animals. The farm cultivates Red and Yellow Catuai and has a nursery of Criollo seedlings collected from trees that survived from more than 50 years ago when that was the primary cultivated variety. New seedlings are planted at the beginning of the rainy season and require extensive care for about a year as their root systems form and they develop foliage for the transition from the nursery to the open field. \u003c\/p\u003e\n\u003cp\u003eIn line with Jorge’s commitment to sustainability, Roble Negro removes all weeds by hand and is completely chemical-free. Established in 2018, this 34.5-hectare farm was revitalized and renamed to honor the birthplace of coffee. Despite its size, only 13 hectares are cultivated, with the remainder preserved as natural forest to protect local flora and fauna.\u003c\/p\u003e\n\u003cp\u003eThe farm sits just behind the Ilamatepec Volcano, benefiting from rich volcanic soil and a climate ideal for coffee cultivation. The coffee is grown entirely under shade provided by native trees, contributing to its exceptional quality. Notably, Finca Etiopia produces Gesha coffee, renowned for its bright, juicy, and exceptionally clean profile.\u003c\/p\u003e\n\u003cp\u003eIn line with sustainability practices, Finca Etiopia employs manual weeding using tools like machetes and avoids chemical herbicides. Soil studies guide their nutrient management, and measures such as soil conservation work and water collection pits protect groundwater. The cherries are carefully tested for sweetness before harvest, ensuring only the best are selected for processing. Finca Etiopia's commitment to quality and sustainability has garnered recognition, including a 22nd-place finish in the 2025 Cup of Excellence competition.\u003c\/p\u003e\n\u003cp\u003eTo process this coffee, cherries were first floated to remove defects. The coffee was then sorted to remove quakers and pulped to remove the shells. The pulped coffee was then sent to metallic carts without passing through the demucilaginator, preserving 100% of the mucilage.\u003c\/p\u003e\n\u003cp\u003eCoffee was then transferred from the fermentation area to the pre-drying area (patios) to immediately reduce excess water content and stop fermentation. The coffee stayed in this stage for 3-5 days and was then put in sacks. Then, the sacks were transferred to African beds for further drying. The sting of a sesongot is extremely painful and can even be fatal, so it's infamous among regional coffee farmers as something to look out for when picking. Harvesting this coffee is no walk in the park, and we're really grateful to Kahpi's team for having the skills and courage to do it.\u003c\/p\u003e\n\u003cp\u003eAulia Kahpi has worked hard to achieve a reputation for quality and now works with 15 neighbouring smallhold farmers to process larger volume lots and secure better prices for their coffee. The raised beds are important to facilitate airflow to ensure equal drying of each cherry.\u003c\/p\u003e\n\u003cp\u003eThe dry cherries, still in their natural hulls, were bagged and moved to the Bette Buna mill in Megadu. There the natural lots rest for a minimum of 8 weeks after bagging to improve the complexity and intensity of each cup profile. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker was given a bonus for his or her years of service, lots were priced at a fraction of the local rate, and assistance was given to apply for the government house fund. In the beginning, workers thought it was too good to be true, but as the first families obtained their own homes, everyone followed suit. In a matter of three years, the town was brought to life, enriched with a deep feeling of security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc) and 96% of these own their own home, giving them the option to take a path for their future that they, themselves, choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots, such as this one, are picked by a special team of skilled harvesters who are paid well above the daily rate for their exceptional skill in picking the ripest cherries at each pass. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The skilled hands of the pickers represent the farm’s most valuable asset. Pickers hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming success in providing a secure home in Aquiares.  \u003c\/p\u003e\n\u003cp\u003eAquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. For example, given that soil health is the most important factor for a successful farm, Aquiares takes many steps to naturally improve the farm’s volcanic soil. The organic matter from pruning and the leaf litter from the coffee and shade trees are left to feed soil microbes and provide organic nutrients. \u003c\/p\u003e\n\u003cp\u003eThe diversified shade trees (over 40 species) also cool the ground, slowing the ripening of the coffee, which allows for sugars from the mucilage to be fully absorbed by the bean, thus improving cup quality. The farm’s agricultural objective is to find synergies like these, where environmental health translates into coffee plant health, which ultimately contributes to long-term stability in the production of high-quality coffee. The farm’s terrain varies from gently sloping to steep hills. Valleys between hills create microclimates that are ideal for growing mainly Caturra and grafted Arabica-Nemaya varieties. Although Aquiares is considered large under Central American standards, the farm’s belief is that it is crucial to tend to every individual coffee plant’s needs. Therefore, Aquiares utilizes a system of pruning each plant independently, instead of pruning by row or lot.\u003c\/p\u003e\n\u003cp\u003eThrough an intensive rehabilitation program, Aquiares has re-planted more than 400,000 coffee trees in small patches of existing fields. It is operated by the Mugaga Farmers’ Cooperative Society and serves approximately 1,000 smallholder members from the surrounding area.\u003c\/p\u003e\n\u003cp class=\"tabs__paragraph\"\u003eNyeri County is characterised by cool temperatures and fertile red volcanic soils typical of the central highlands, commonly known as nitisols. The region lies between the eastern foothills of the Aberdare mountain range, part of the eastern edge of the Great Rift Valley, and the western slopes of Mount Kenya. Nyeri town also serves as a gateway for visitors travelling to Aberdare National Park and Mount Kenya. Coffee produced in Nyeri generally develops and matures slowly, which contributes to the formation of dense, hard beans. This quality is reflected in the cup through pronounced acidity and a rich, syrup-like mouthfeel. For this reason, Nyeri has long been recognised as one of Kenya’s most important coffee-producing regions.\u003c\/p\u003e\n\u003cp class=\"tabs__paragraph\"\u003eCoffee is cultivated mainly on the slopes and upper plateau, where most farming families live. The land is divided into small family plots, with each household managing its own coffee trees. The mill has introduced an electronic weighing system that records the weight of cherry deliveries and provides each farmer with a printed receipt. The receipt also shows a cumulative total of the coffee delivered over time.\u003c\/p\u003e\n\u003cp class=\"tabs__paragraph\"\u003eThis coffee is fully washed. After delivery to the wet mill, the cherries are pulped to remove the outer skin and fruit. Wastewater from this stage is directed into soaking pits for recirculation, supporting water conservation. Pulping is carried out using a disc pulper with three sets of discs that separate the skin and fruit from the parchment-covered bean. The coffee is then fermented overnight to break down residual sugars, after which it is washed, soaked, and spread on raised drying beds. Drying typically takes between 7 and 15 days, depending on climatic conditions and ambient temperature, until the moisture content reaches 10-12%. In some cases, drying may extend over two to three weeks under slower conditions.
