We love a lot of things about Brazil as a coffee origin: It has a strong minimum wage, a strong domestic consumption market to support producers, and we have more than a decade's worth of relationships and buying experience there. This Brazil 'Futures' is a new product line for Skylark that will keep a consistent flavor profile of Melted Chocolate and Macademia whilst sourcing from various smallholder farmers who can benefit from partnering with Skylark. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region.

The community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker was given a bonus for his or her years of service, lots were priced at a fraction of the local rate, and assistance was given to apply for the government house fund. In the beginning, workers thought it was too good to be true, but as the first families obtained their own homes, everyone followed suit. In a matter of three years, the town was brought to life, enriched with a deep feeling of security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc) and 96% of these own their own home, giving them the option to take a path for their future that they, themselves, choose.

All Aquiares coffee is picked by hand to ensure consistent high quality. Microlots, such as this one, are picked by a special team of skilled harvesters who are paid well above the daily rate for their exceptional skill in picking the ripest cherries at each pass. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The skilled hands of the pickers represent the farm’s most valuable asset. Pickers hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. To take better care of its field workers, Aquiares has established first-of-its-kind physical therapy sessions and also a daily warm-up routine of exercise before work. Many pickers return each year, confirming success in providing a secure home in Aquiares.

Aquiares is strongly committed to and has become an international leader in environmental sustainability. The farm has long seen the connection between agricultural, environmental, and social health. By planting more than 50,000 shade trees, creating natural buffers around streams and water springs, preserving the river valleys as forests, planting along the contour, implementing integrated pest management systems, and many other steps, Aquiares has demonstrated how to make ecological ideals a reality. For example, given that soil health is the most important factor for a successful farm, Aquiares takes many steps to naturally improve the farm’s volcanic soil. The organic matter from pruning and the leaf litter from the coffee and shade trees are left to feed soil microbes and provide organic nutrients.

The diversified shade trees (over 40 species) also cool the ground, slowing the ripening of the coffee, which allows for sugars from the mucilage to be fully absorbed by the bean, thus improving cup quality. The farm’s agricultural objective is to find synergies like these, where environmental health translates into coffee plant health, which ultimately contributes to long-term stability in the production of high-quality coffee. The farm’s terrain varies from gently sloping to steep hills. Valleys between hills create microclimates that are ideal for growing mainly Caturra and grafted Arabica-Nemaya varieties. Although Aquiares is considered large under Central American standards, the farm’s belief is that it is crucial to tend to every individual coffee plant’s needs. Therefore, Aquiares utilizes a system of pruning each plant independently, instead of pruning by row or lot.

Through an intensive rehabilitation program, Aquiares has re-planted more than 400,000 coffee trees in small patches of existing fields. This rejuvenated the crop of trees and increased the land’s utilization. It also played a crucial role in the 2012 rust attack, as young plants resisted the disease better, slowing its spread. Its stringent environmental stewardship enabled the farm to achieve Rainforest Alliance Certification in 2003. In 2012, Aquiares became the first farm in Costa Rica to fulfill the requirements of the Rainforest Alliance Climate Module. This requires adhering to careful standards of greenhouse gas emissions and energy use, which are meticulously tracked through each harvest season. Mexican coffee has dwindled to almost nothing in recent years as a result of coffee leaf rust, low C market prices, political strife, and drug trafficking. Almost all remaining Mexican coffees are grown on large estates in Oaxaca and other well-known provinces.

This coffee is different. It is from the Guerrero region, and is grown by indigenous people in traditional biodynamic fashion. These coffees are from tiny farms (often less than a hectare) with productions of less than 60 kg from many of them. These farmers' way of life depends on companies like Skylark to support them by paying higher prices than the market would offer for the quality they supply... that's why we bought a really big lot from Guerrero this year. Fortunately, the quality of this particular lot is stellar. Notes of melted milk chocolate, coffee pulp, and Lambrusco will reward you for supporting these farmers along with us.

We sourced this coffee through Ensambles, who do superlative work to shepherd this coffee from seed to our roasterie. Here's a bit more info from them below:

The state of Guerrero is one of Mexico’s 16 coffee-producing states, bordering Oaxaca and Puebla. In Guerrero, 80% of the territory is mountainous, and the main economic activity is agriculture. Coffee was first introduced by the Spanish in Sierra de Atoyac, and most of the labor force for picking coffee was brought over from the poorest areas of Guerrero, a region called Montaña Alta. Those workers, seed by seed, propagated their homes with coffee, bringing it in their pockets from the big plantations in Atoyac. The region is now characterized by the production of shade-grown natural coffees. Guerrero almost exclusively produces naturals, which is rare in Mexico where more than 90% of exported coffee is washed.

Nowadays, Montaña Alta suffers from high rates of poverty, marginalisation, and migration to the northern states of Mexico and the US as people search for work. In the face of a lack of opportunities, and the growing demand for narcotics in northern countries, a crack in the door was opened for drug trafficking to take over these vulnerable regions. This proliferation of narco-trafficking has unfortunately painted Guerrero in a very unfavorable light, the perception of which is exceedingly difficult to overcome. Because of this context, few companies have invested in the area with regards to the purchasing of coffee. Almost 100% of Guerrero coffee is bought, directly or indirectly, by one single private company, who then resells to a big international buyer. This monopoly has set very low prices for coffee and a general lack of interest from this crop.

Ensambles Cafes Mexicanos began a project focused on specialty coffee in this area back in 2017, a project led by Miguel Guevara, an agronomist originally from Montaña Alta. Miguel has been working with producers to improve quality and help reach out to different markets. Miguel delivers training on selective picking, cherry flotation, and drying. He also supports the project by obtaining regional funds to finance nurseries, local warehouses, raised beds etc. The first producers to join this initiative were all women. Many women in this region are empowered to make decisions because their husbands are living farther north for work. Those women call themselves the “Evas," in reference to the first woman Eve. They decided to call the project JUBA, which means 'mountains' in their indigenous language Mephaa. Discontentment with low prices has allowed this project to grow rapidly, increasing from 5 to now 70 producers in 5 years.

Ensambles now has a regional lab in Montaña Alta with analysts and cuppers where producers can come and bring their sample. We provide feedback and recommendations until their coffee qualifies for the specialty premium. Our criteria range from cup quality, humidity/water activity, to yield. We are now able to employ and empower two women from the community to coordinate the lab and reach out to more producers across the region. "Nahual" means the ability to transform yourself into another being. It was nearing the end of the day for affordable and delicious decafs on the market, so we decided to get creative. Historically high green coffee prices and increased demand for decafs using the ethyl acetate (‘sugar cane’) process have caused supply shortages and MUCH higher costs, but we don’t think you should have to go without tasty decaf at reasonable prices.

So here’s our strategy: We’re finding less expensive coffees that we think (based on our experience) will make for a sweet, chocolatey decaf. We’re sending them off to be decaffeinated as a special order and bringing them to you at prices that can work for all of us — farmers, cafes, Skylark, and coffee drinkers. With Twilight, you'll get reliably accessible coffee with satisfying notes of chocolate, biscuit, and cherry cola.

Typically, importers make the choices and take the chances on which coffees to decaffeinate. It’s not always easy to predict how a decaffeinated coffee will turn out, and the minimum order for decaffeination is 4 tonnes, so it’s not usually a risk roasters want to take. However, we believe there are plenty of special yet affordable coffees out there that will taste great decaffeinated, so we’re willing to roll the dice.

Right now, Twilight is a washed processed coffee from our friends at Bette Buna in Guji Ethiopia. It was a very fresh crop ‘grade 4’ coffee when we got our hands on it, so the producers paid less for the sorting of the green coffee. We’ve run it through our optical colour sorter to make it more consistent, and it’s tasting delicious. Everybody wins, and we’ll continue looking for opportunities to make decafs with impact throughout our supply chain for the foreseeable future.

Elevation: 1400-2100 MASL

Varietal: Heirloom

Cup Score: 84.75

Price paid per KG: £10.19

Process: Sugar cane decaf, done in Bremen Germany

Please note, this listing is for GREEN/UNROASTED coffee. With a background in NGO and development work, they decided to grow and scale the farm as the foundation for a larger company with greater impact. Coffee is a big deal in Ethiopia: More than 33% of the country's GDP comes from the export of coffee and 80% of that production comes from smallholder farms under 2 hectares, even as 90% of people working in coffee in Ethiopia don’t make a livable income. Both farms have tree nurseries where varietals are grown for their own use as well as to share with surrounding farmers. Similarly, they have facilities where they process their own lots and educate other farmers in processing techniques while their ‘Coffee Campus’ programme provides training in roasting, brewing, and even exporting. Essentially, they invest in their farming communities not only by teaching and motivating farmers but also by hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. After that, the bags of green coffee were loaded on a truck to take a three- to five-day drive to the Bette Buna dry mill in Gelan, located close to Addis Ababa. Both farms have tree nurseries where climate change-resistant varietals are grown to share with surrounding farmers. Similarly, they have facilities where they not only process their own lots but also educate other farmers in processing techniques, while their Coffee Campus programme provides training in roasting, brewing, and even exporting. They provide countless opportunities for their farming communities by not only teaching and motivating farmers but also hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. Ángela manages the administration, while Edinson oversees coffee processing and farm operations. They have two coffee farms located at 1600-1850 meters above sea level in the central Huila Mountains. These farms cover 18 hectares, 10 of which grow traditional varieties such as Caturra and Colombia, and one of which is exclusively for special varieties, including Eugenoides, Bourbon Pointu, Geisha, Java, Bourbon Chiroso, Wush Wush, Bourbon Ají, Papayo, Pacamara, Sudan Rume, and Arará. Each year, we try to get in one or two bangers to showcase just how great they can be. We hold fire until we find what we think is the best Kenya of the year, and this is it: so juicy and tart, with vibrant notes of strawberry, rhubarb, and blood orange. A perfect summer coffee!

We sourced this coffee through our good friends at Falcon. Here's a bit more about Tegu from their team:

In the highlands of Kenya, where fertile volcanic soils meet cool mountain air, Tegu Factory produces coffees that are widely recognised for their clarity and vibrancy. Situated near the town of Karatina in Nyeri County, this washing station operates under the Tekangu Farmers’ Cooperative Society, alongside its sister factories Karogoto and Ngunguru. Established in 1969, the cooperative now supports around 1,200 smallholder farmers, most of whom cultivate less than one hectare of land across nearby villages.

The name Tegu, meaning 'low place', reflects its geographical setting in the foothills between Mount Kenya and the Aberdare range. At an altitude of approximately 1,700 meters above sea level, the region benefits from conditions ideal for coffee cultivation. The combination of rich soil, high elevation, and a cool climate slows the maturation of coffee cherries. This extended development period allows sugars and acids to concentrate, resulting in the bright, citrus-forward profiles that have become synonymous with Kenyan coffees.

Farmers supplying Tegu grow a mix of traditional and modern varieties, including SL28, SL34, Ruiru 11, and Batian. The SL varieties, originally developed by Scott Agricultural Laboratories in the early 20th century, are prized for their deep root systems and resilience in water-scarce conditions. In contrast, newer cultivars such as Batian and Ruiru 11 were introduced by the Kenya Coffee Research Institute to improve disease resistance and productivity. Both are capable of producing cherries within just two years, offering farmers a faster return while maintaining quality potential.

Harvesting is done entirely by hand, with farmers selectively picking only ripe cherries before delivering them to Tegu Factory. Once received, the cherries undergo meticulous sorting to remove defects. Processing follows the fully washed method, beginning with pulping and fermentation that lasts between 12-16 hours (depending on environmental conditions). After fermentation, the coffee is soaked in clean water for an additional 24 hours, a practice that not only stabilises the coffee but enhances cup clarity and brightness.

Drying takes place on raised beds inside covered structures where the parchment is carefully managed. Workers regularly turn the coffee to ensure even drying and protect it from excessive heat during the day and moisture at night. This stage typically lasts between 7-15 days. Once dried, the parchment is milled and prepared for export.

Elevation: 1700 MASL

Varietal: SL28, SL34

Cup score: 89

Price paid per kg: £11.01

Process: Washed

Please note, this listing is for GREEN/UNROASTED coffee. Here's more of the family story from our importing partners Mi Cafe:

Luz Ángela Rojas grew up surrounded by coffee plants, immersed in nature while helping her father with every task the farm required. During a time of coffee crisis, her parents (pictured above) advised her not to stay at the farm. The idea was for her to go to university and follow a different path, away from the challenges of the coffee sector and the traditional roles of household duties, looking after children, and maintaining the home. Ángela began a career in healthcare, where she became a head nurse. However, as she advanced she felt that something was calling her back to her roots: coffee. She began to realise that coffee plants, just like humans, require care and attention to thrive.

So, Ángela began to reconsider and coffee became part of her own dreams. She saw farming not only as a family tradition but as a project that could be reinvented. She also decided that her life would not just be about studying and working in the city, but about integrating her knowledge of health and management into the coffee world. She discovered that the principles of administration she had learned could be applied to any business, even to her family’s coffee farm.

Although her parents insisted she follow her professional career, she reconnected with life on the farm and decided to stay and work alongside her parents. Ángela is committed to offering differentiated coffees with a wide variety of flavours beginning with quality agronomic work.

The project is entirely family-run, and everyone involved is motivated to push the quality of their coffees. Ángela has transformed the family legacy into a model of innovation within coffee farming.

For this coffee, hand-selected ripe cherry was oxidised for 24 hours in food-safe drums, then pulped dry and oxidised for a further 24 hours to remove mucilage. The coffee was then washed at 45°C to create a thermal shock, followed by fermentation for 72 hours at temperatures below 25°C with a specific yeast, Gesha pulp, and mosto from a previous fermentation. After 72 hours, the coffee was washed at 5°C to seal in the fermentation.
