Since 2021, they've linked with Colombian exporter Siruma to provide training, price transparency, and accessibility to smallholder farmers across Colombia, especially those in remote areas. It's especially valuable for these farmers to receive education on the business of speciality coffee. The more knowledge they have, the more they can advocate for themselves and their products in the coffee market. Chapata was purchased as a part of this ongoing project. \u003c\/p\u003e\n\u003cp class=\"tabs__paragraph\"\u003eFor this lot, cleaned and ripe cherries were placed in baskets in a temperature-controlled room to support the aerobic process for 24-36 hours. The basket holes allow for the free circulation of all oxygen and CO2 that are produced during fermentation. The coffee was then relocated to a mechanical drying system, maintaining a temperature between 35-40 degrees Celsius until reaching a moisture level of 10-11%. Bette Buna gives their anaerobic lots the name ‘Ashu’ not only because they make for greatly satisfying cups of coffee, but also because, like Dawit, there is a lot of ingenuity, hard work, and a certain amount of luck that bring these coffees into being. This special Ashu lot is a 96-hour anaerobic natural lot processed by Dawit and Siday Tadesse, Bette Buna’s processing manager. \u003c\/span\u003e\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWe’re getting about 25 different coffees from \u003ca href=\"https:\/\/www.bettebuna.com\/\" rel=\"noopener\" target=\"_blank\"\u003eBette Buna\u003c\/a\u003e this year because we so strongly believe in all the work they're doing to facilitate community growth through coffee farming and production. With a background in NGO and development work, they decided to grow and scale the farm as the foundation for a larger company with greater impact.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eHaving started in 2019, they have already grown considerably. They have expanded the Taferi Kela farm from 2 to 50 hectares and have spread to a second 50-hectare farm in Megadu, Guji. Both farms have tree nurseries where climate change-resistant varietals are grown to share with surrounding farmers. Similarly, they have facilities where they not only process their own lots but also educate other farmers in processing techniques, while their Coffee Campus programme provides training in roasting, brewing, and even exporting. They provide countless opportunities for their farming communities by not only teaching and motivating farmers but also hiring local workers at their nurseries and mills, including single mothers and disabled people who would struggle to find employment elsewhere. They also work hard to incorporate sustainable farming methods, rewild forests on their land, and protect local wildlife to promote ecosystem health for coming generations.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eTo create this lot, cherries were de-pulped and then fermented with extra pulp from another washed coffee lot in sealed barrels. There were no added yeasts or starters, but the pulp gave the bacteria some extra sugar to feed on. After fermentation, the coffee was washed, spread in thin layers on African raised beds, and dried in the sun for about 20-25 days. We're honored to carry these coffees every harvest cycle.\u003c\/p\u003e\n\u003cp\u003eWe're going to have a few Sesongot coffees this year, all from Aulia Kahpi of Rakyat Farm in Bebesen, Sumatra. Kahpi names these coffees 'Sesongot' after the distinctive \u003ca rel=\"noopener\" href=\"https:\/\/ecency.com\/hive-132248\/@roronoa46\/terrible-little-caterpillars\" target=\"_blank\"\u003ecaterpillars\u003c\/a\u003e that hang from the coffee trees on his farm. The sting of a sesongot is extremely painful and can even be fatal, so it's infamous among regional coffee farmers as something to look out for when picking. Harvesting this coffee is no walk in the park, and we're really grateful to Kahpi's team for having the skills and courage to do it.\u003c\/p\u003e\n\u003cp\u003eAulia Kahpi has worked hard to achieve a reputation for quality and now works with 15 neighbouring smallhold farmers to process larger volume lots and secure better prices for their coffee. Kahpi inherited his farm from his parents, but his growing network of farmer collaborators has been achieved through his entrepreneurial spirit, hard work, and openness. Already an experienced processor, he recently attended Lucia Solis' Indonesian fermentation camps to further finesse his processing techniques.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThis coffee is a blend of these varietals: Abyssinia, Ateng, Caturra, Gayo, Timtim, and Typica. To create this lot, Kahpi selectively handpicked ripe, red cherry from his own farm along with some from neighboring farmers. He fermented the cherries for 24 hours, changing the water every 12 hours. After fermentation they were laid on patios to dry. They have faced many challenges to achieve their dreams, including rebuilding their entire farm after a devasting fire. Their father's determination has seen them through each challenge, and the whole family is involved in coffee production. Mum finds joy in gardening, while the grown kids specialise in different aspects of the business such as drying, processing, and commercialization. They have turned their farm into a world-renowned platform for speciality coffee with exceptional and exquisite flavours and aromas. Despite the hard times they never gave up, and their dedication and passion have allowed them to provide a promising new way of life and education for their children's future. Today the entire family continues this legacy, making sure Wilder Lazo's coffee is distinguished among the strictest palates. Lazo's history is a reminder of the importance of perseverance and working hard with love. His farm is a charming place, the beautiful result of an entire family's effort and passion. \u003c\/p\u003e\n\u003cp\u003eWilder himself \u003cmeta charset=\"utf-8\"\u003eis a well of knowledge when it comes to genetics and processes. He focuses on bringing out the true characteristics of each varietal, refining its genetics by selecting the right seeds and incorporating fermentations and post-harvest processes that highlight its special attributes. \u003cmeta charset=\"utf-8\"\u003eThis knowledge comes from Wilder’s past career in bovine genetics, where he dedicated many years to travelling across America to study and improve cattle breeds. Wilder realised his family coffee farm was suffering because of poor coffee genetics, so he diverted his knowledge towards coffee. This move ended up saving his family’s farm, El Diviso, and allowed him to buy Bella Alejandria in 2016. \u003c\/p\u003e\n\u003cp\u003eWilder recently joined the El Placer Farms Project because of his close friendship with Sebastian Ramirez, director of El Placer. He is excited to have more contact with the roasteries and coffee drinkers who get to enjoy his delicious harvests.\u003c\/p\u003e\n\u003cp\u003eTo process this coffee, the cherries were collected over 15 days to ensure they were all at 22 degrees Brix or above. The cherries were then sorted in water and those that floated were discarded. The mature cherries were fermented in 200 litre tanks for 7 days, submerged in water until the water’s pH reached 5.5 or 12 degrees Brix. The idea was for her to go to university and follow a different path, away from the challenges of the coffee sector and the traditional roles of \u003cmeta charset=\"utf-8\"\u003ehousehold duties, looking after children, and maintaining the home. Ángela began a career in healthcare, where she became a head nurse. However, as she advanced in her career and gained professional experience, something was calling her back to her roots: coffee. She began to realise that coffee plants, just like humans, require care and attention to thrive. \u003c\/p\u003e\n\u003cp\u003eIt was then that Ángela began to reconsider her life. Coffee became part of her dreams, and she saw it not only as a family tradition but as a project that could be reinvented. She decided that her life would not just be about studying and working in the city, but about integrating her knowledge of health and management into the coffee world. She discovered that the principles of administration she had learned could be applied to any business, even to her family’s coffee farm.\u003c\/p\u003e\n\u003cp\u003eÁngela worked for two years as a nurse and then five years as an audit leader until the pandemic changed her course. Her administrative job allowed her to work from anywhere, giving her the opportunity to return to the farm and rediscover her purpose. Although her parents insisted she follow her professional career, she reconnected with life on the farm and decided to stay and work alongside her parents. Thus, the new project was born: a family dream that not only seeks to preserve the roots of coffee but to transform, innovate, and make it unique. Ángela is committed to offering differentiated coffees with a wide variety of flavours beginning with quality agronomic work. It's sweet and fun with citrusy notes and the slightest pleasant bitterness (think pink grapefruit).\u003c\/p\u003e\n\u003cp\u003eA year and a half ago, Edinson Argote and Ángela Rojas joined forces to create the Quebraditas project, which includes two farms – Chorro Alto and Quebraditas. Ángela had left her home to study nursing, but ultimately returned home during the COVID-19 pandemic and decided to stay, leaving her nursing career for a life in coffee.\u003c\/p\u003e\n\u003cp\u003eQuebraditas is a family-run project dedicated to producing premium coffee with standout and reproducible sensory profiles thanks to their fermentation processes, including thermal shock and yeast inoculation. They also focus on agronomic management and soil care (strategic shading, use of organic matter, maintenance of soil pH and calcium) that allows them to increase the potential of each crop.\u003c\/p\u003e\n\u003cp\u003eOporapa is a region that has not yet gained significant recognition in the coffee world, partly due to infrastructure challenges and other factors. Edinson and Ángela started their journey on Chorro Alto, a farm owned by Ángela’s parents. Ángela manages the administration, while Edinson oversees coffee processing and farm operations. They also collaborate with two other farms – one in La Plata, which grows varieties such as Sidra and SL28, and another in the Argentina region. Additionally, they purchase coffee cherries from San Adolfo.\u003c\/p\u003e\n\u003cp\u003eThey have two coffee farms located at 1600-1850 meters above sea level in the central Huila Mountains. These farms cover 18 hectares, 10 of which grow traditional varieties such as Caturra and Colombia, and one of which is exclusively for special varieties, including Eugenoides, Bourbon Pointu, Geisha, Java, Bourbon Chiroso, Wush Wush, Bourbon Ají, Papayo, Pacamara, Sudan Rume, and Arará. Aquiares is a Costa Rican legacy farm, and they've set an absolute gold standard in how they treat people and the planet. The way they increase biodiversity, capture carbon, and care for both Costa Rican and migrant workers is a testament to how coffee CAN change people's lives. In fact, Diego Robelo (pictured above) is more like a town mayor than a coffee farmer, and our colleague Will recently visited to write about \u003ca href=\"https:\/\/skylark.coffee\/blogs\/news\/aquiares-not-just-a-costa-rican-coffee-farm\"\u003ethis expansive community\u003c\/a\u003e. \u003c\/p\u003e\n\u003cp\u003eWe've bought coffee from Aquiares since our first year at Skylark, but we are delighted to partner with them more fully for the first time in 2025 as well as for the foreseeable future. We plan to have their coffee on offer year-round as a staple to support the amazing work they do. Check out more of their story by reading below:\u003c\/p\u003e\n\u003cblockquote\u003e\n\u003cp\u003eAquiares, one of Costa Rica’s largest and most historic coffee farms, sits high on the fertile slopes of Turrialba volcano. Producing coffee continuously for over a century, the farm has developed an enduring model for growing high-quality Arabica coffee, protecting a stunning natural setting, and supporting a thriving local community of 1,800 people. Established by British farmers in 1890, Aquiares was one of the first estates to produce and export Costa Rican coffee. In 1971, the farm was purchased by its current owners, three families who have worked together with the farm's staff and community to implement a modern model of sustainable agriculture. Don Alfonso took over farm management in 1992, and at the time he was new(ish) to coffee. However, one thread throughout his life has been a commitment to social justice. From the beginning, Don Alfonso made the social welfare of farm workers and the wider community one of his main priorities. His dedication has transformed the farm and the region. \u003c\/p\u003e\n\u003cp\u003eThe community of Aquiares, originally created to house workers on the estate, sits in the midst of the farm. When it was built, the farm owned the houses where employees lived, creating home insecurity amongst working families. In 1992, under Don Alfonso’s management, the farm started a project to enable people to own their own houses. Each worker received a bonus for his or her years of service, housing plots were priced at a fraction of the local rate, and workers received assistance to apply for the government house fund. In the beginning, this seemed too good to be true, but as the first families obtained their own homes everyone else followed suit. In a matter of three years, the town was brought to life, enriched by security and achievement. Today, only around 15% of Aquiares residents work on the farm (many have gone on to become schoolteachers, doctors, etc.) and 96% of these own their own home, giving them options for the future that they themselves can choose.\u003c\/p\u003e\n\u003cp\u003eAll Aquiares coffee is picked by hand to ensure consistent high quality. Microlots such as this one are picked by a special team of expert harvesters who are paid well above the daily rate for their exceptional skills. Each tree is visited up to seven times during the harvest to ensure that only fully red ripe cherries are picked. The pickers represent the farm’s most valuable asset. They hail from the community of Aquiares, nearby towns, and even from the neighbouring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s daycare. The farm sponsors doctors’ visits for pickers and their families twice a week where nutritional health advice is also given. In the 1980s, it was a large coffee estate in Quindío, but today, only half of its original production remains active. Sebastian is personally responsible for processing and developing flavour profiles, ensuring the highest quality in every batch. Ángela had originally left the countryside to study nursing, but ultimately returned home during the COVID-19 pandemic to exchange her nursing career for a life in coffee.\u003c\/p\u003e\n\u003cp\u003eThis coffee is from Quebraditas, their family-run farm dedicated to producing premium coffee with standout and reproducible sensory profiles thanks to innovative fermentation processes, including thermal shock and yeast inoculation. They also focus on agronomic management and soil care (strategic shading, use of organic matter, maintenance of soil pH and calcium) that allows them to increase the potential of each crop. Ángela manages the administration, while Edinson oversees coffee processing and farm operations. They also collaborate with two other farms – one in La Plata, which grows varieties such as Sidra and SL28, and another in the Argentina region, while additionally purchasing coffee cherries from San Adolfo.\u003c\/p\u003e\n\u003cp\u003eTheir coffee farms are located at an altitude of 1600-1850 meters above sea level in the central Huila Mountains. These farms cover 18 hectares, and while most of the land is planted with traditional varieties such as Caturra and Colombia, at least 1 hectare is reserved exclusively for special varieties, including Eugenoides, Bourbon Pointu, Geisha, Java, Bourbon Chiroso, Wush Wush, Bourbon Ají, Papayo, Pacamara, Sudan Rume, and Arará. The vision is to eventually grow only these non-traditional varieties.\u003c\/p\u003e\n\u003cp\u003eTo process this lot, cherries were floated to remove green, overripe, and dry cherry.\u003cstrong\u003e \u003c\/strong\u003eIt was then oxidised in food-grade plastic drums for 12 hours and depulped without using water. After fermenting for 24 hours in an open tank to remove mucilage, fermentation continued for 72 hours \u003cmeta charset=\"utf-8\"\u003eat temperatures below 25°C with a mix of ripe peach and specific yeasts. After fermentation, the coffee was washed and dried for 42 hours at 38°C. However, Hervey wanted to move beyond being a commodity producer, so he sought out renowned Gesha varietals in hopes of entering the specialty market and forming a direct connection with his customers. At the same, he works at finding the right process to add value to his Castillo. His commitment to finding the perfect profile is a reminder of the unseen hard work behind specialty coffees. The Minga team in Pitalito has tasted countless experiments from Hervey, which has been a valuable learning experience for us and has helped us build a strong friendship with both Hervey and Rocio.\u003c\/p\u003e\n\u003cp\u003eIt is important to acknowledge Rocio in this achievement because women often work behind the scenes in the coffee businesses of smallholders. The coffee is naturally grown under shade trees, primarily Enset. The best cherries are brought from nearby farmers. Green beans are handpicked by local women. Once processed and dried, the coffee is stored at Moplaco in Gerji, Addis Ababa.
