Since 2021, they've linked with Colombian exporter Siruma to provide training, price transparency, and accessibility to smallholder farmers across Colombia, especially those in remote areas. It's especially valuable for these farmers to receive education on the business of speciality coffee. The more knowledge they have, the more they can advocate for themselves and their products in the coffee market. Chapata was purchased as a part of this ongoing project. \u003c\/p\u003e\n\u003cp class=\"tabs__paragraph\"\u003eFor this lot, cleaned and ripe cherries were placed in baskets in a temperature-controlled room to support the aerobic process for 24-36 hours. The basket holes allow for the free circulation of all oxygen and CO2 that are produced during fermentation. The coffee was then relocated to a mechanical drying system, maintaining a temperature between 35-40 degrees Celsius until reaching a moisture level of 10-11%. They also focus on agronomic management and soil care (strategic shading, use of organic matter, maintenance of soil pH and calcium) that allows them to increase the potential of each crop.\u003c\/p\u003e\n\u003cp\u003eEdinson and his partner Ángela started their journey on Chorro Alto, a farm owned by Ángela’s parents. Ángela manages the administration, while Edinson oversees coffee processing and farm operations. They have two coffee farms located at 1600-1850 meters above sea level in the central Huila Mountains. These farms cover 18 hectares, 10 of which grow traditional varieties such as Caturra and Colombia, and one of which is exclusively for special varieties, including Eugenoides, Bourbon Pointu, Geisha, Java, Bourbon Chiroso, Wush Wush, Bourbon Ají, Papayo, Pacamara, Sudan Rume, and Arará. The vision is to eventually grow only these non-traditional varieties. \u003c\/p\u003e\n\u003cp\u003eTo process these lots, cherries were floated to remove green, overripe, and dry cherry. They were then oxidised in food-grade plastic drums for 12 hours and depulped without using water. After fermentation, the coffee was washed and dried for 42 hours at 38°C. (Our colleague Will has visited twice, and \u003ca href=\"https:\/\/www.skylark.coffee\/blogs\/news\/kerehaklu\" rel=\"noopener\" target=\"_blank\"\u003ewrote about the wildlife and the agronomy here\u003c\/a\u003e.) Pranoy strongly prefers washed process coffees (though Kerehaklu also produces some great naturals) and this lot is actually anoxic washed, meaning the coffee first went through fermentation in an oxygen-reduced environment prior to washing. One way to kick-start this initial fermentation is by adding liquid from another active fermentation — often referred to as Mossto or Mosto, literally meaning grape juice — and Pranoy has been doing this since 2023. In short, this is an innovative coffee.\u003c\/p\u003e\n\u003cp\u003eWill was in India this year just as the arabica harvest was coming to an end, the first time he was able to cup coffees that we would receive later on. There's nothing like the sparkle of fresh crop coffee cupped at origin, and these coffees have held up nicely since then: They're tasting bright, sweet and delicious, and we've purchased more lots from Kerehaklu than ever before.\u003c\/p\u003e\n\u003cp\u003eKerehaklu is spread across 250 acres and has been chemical-free since 2016. The biodiversity there is incredible, with macaques, parrots, snakes, deer, civets, and boars regularly roaming, and even some occasional tigers. It has been run by the Thipaiah family for five generations. Today, Ajoy mainly looks after the growing and agronomy side and while Pranoy manages processing.\u003c\/p\u003e\n\u003cp\u003eThey primarily grow arabica coffee, but also two other species, canephora and liberica. Some plants on the estate are more than 100 years old, so the land and plant matter are well adapted to one another. Most of the varietals are Indian cultivars called 'Selection' — these are hybridised from other varieties to grow well in their environment. The Thipaiahs keep a plant nursery where they look after young plants from seed, including various 'Selection' arabicas, Obata, and SL28. They also have lots of avocados and pepper vines, both of which they produce to a very high standard and sell.\u003c\/p\u003e\n\u003cp\u003eThe estate is home to many beautiful cluster fig trees (some estimated to be 400 years old) that grow around other trees slowly and eventually engulf them. The cluster figs aren't particularly tasty to humans, but they are much beloved by the many birds that live there, and the birds' guano is an excellent fertiliser for the coffee. These fig trees are the secondary canopy, with the highest canopy coming primarily from citrus trees. The ample shade means the coffee can grow and mature slowly. As a result, the output on an estate like this is much, much lower than more intensive \"monocrop\" coffee farms, but if you take a wider look at the total sum of outputs from all the crops, they are incredibly productive.
